What kind of pot for best tomato sauces and simmer? stainless steel, aluminum, copper, anodized aluminum or other?
I prepare a many sauces simmer slowly. Tomato sauce can be very acidic and ruin a pot or burn if not stirred frequently. I need to know what is the best pot to make this kind of sauce without compromising the arrival of the pot or pots that interact with the sauce.

Here's a tip: if you want the sauce to better adhere to the dough when the dough is almost finished boiling, turn off the heat and let stand in water a minute. Then rinse the pasta after draining the cooking water. The effect will be a richer flavor that transfers the flavor of the sauce better.
